Make this satisfying baked oat breakfast muffin as healthy or unhealthy as you wish.  A great adaptable easy bake with only four main store cupboard ingredients.  Quick to prepare and great for on the go.

Ingredients (makes 1 muffin):

1 Egg

40g oats

1 Pot of yogurt (any flavour)

Splash of vanilla essence (if desired)

 

Method:

Mix egg, oats, yogurt, and splash of vanilla in a bowl.  Add to greased ramakin and bake in a preheated oven for 20 minutes at 180 degrees.

 

Add your favourite seeds for additional flavour and fibre.

Try adding a small amount of your favour fruit, like pear, banana or apple to the mix before baking.

Serve with fresh fruit for a healthy hearty breakfast or chocolate spread for a delicious indulgent late night snack.

Can be made into a loaf too – as recently spotted on a trip to Donegal Town.
