I love cooking but baking and desserts is not my strong point and usually the last thing I think about, if at all. This recipe one of those happy accidents, something I whipped up when I had family coming but forgot about the sweet. It is made with ingredients that can be found in most kitchens. It’s a great way to use up leftover cookies or apples. Quick and easy to prepare and tastes fantastic too.
Ingredients (makes 6 servings):
5 Eating apples
2 Tablespoons of water
1 Tablespoon of sugar
4 extra large shop bought cookies / homemade cookies
50g of real butter
Ice cream to serve
Method:
Peel, core and chop the apple, stew in a saucepan with water and sugar for about 15 minutes.
Bash the cookies into very small pieces in a bag using a rolling pin. (I’ve started doing this and freezing any leftover crumbled cookies to use in future Apple Cookie Crumbles, if frozen defrost before use and don’t add the butter until you are ready to make the Apple Cookie Crumble). Melt the butter in a saucepan and add the crumbled cookies.
When the apple has stewed and the crumble is mixed with the butter, add the apples to a greased ovenproof dish and layer the crumble on top. Bake in a preheated oven for 15 minutes at 180 degrees.
